Pumpkin Risotto

I know, I’m late: the night of Halloween has gone but I have a very interesting recipe  to suggest and which can be cooked not only for Halloween parties: Pumpkin Risotto. This recipe combines perfectly British and Italian traditions, realizing a perfect dish for these cold evenings. Pumpkins are one of the most important ingredient of this season. During the latest days it was amazing to see people buying them to cook or to carve, realizing wonderful lanterns. In Italy people don’t to carve pumpkins but they use them for cooking a lot of delicious recipes: risotto, ravioli, soups, cakes are just few examples. Now it’s time to prepare our Pumpkin Risotto.
